Elizabeth A. Nelson, MS, RD, CDCES, registered dietitian at University of Colorado Health, has been recognized by Marquis Who’s Who Top Health Care Professionals for dedication, achievements, and leadership in wellness and dietetics.
Ms. Nelson’s interest in nutrition was sparked at a young age during a high school biology class, where she was first introduced to the fundamentals of how the human body functions and how its processes are affected by diet. She became known as one of the only students in the school who would read food labels, driven by an insatiable curiosity and desire to understand how food choices impacted her and others.
Since then, Ms. Nelson has established a career of more than 40 years in nutrition, dietetics and wellness. Since 2014, she has served as a registered dietician with University of Colorado Health. In addition to general nutrition advice, University of Colorado Health offers dietary planning guidance for patients dealing with a range of diagnoses, including cancer, diabetes, high blood pressure and cholesterol, kidney disease, and pregnancy. Ms. Nelson collaborates with doctors to ensure that each patient receives dietary strategies that are individualized to their health needs. She plays a key part in encouraging positive outcomes, no matter what patients are going through.
Prior to embarking upon her professional journey, Ms. Nelson built a strong foundation in her education. She obtained a Bachelor of Science in dietetics from the University of Vermont in 1983. Subsequently, Ms. Nelson earned a Master of Science in food science and nutrition from Colorado State University in 1988. She has further solidified her credentials through a number of professional achievements. Ms. Nelson is a registered dietitian and is certified as a nutrition support clinician. She additionally completed certification as a specialist in diabetes care and education in 2018.
Ms. Nelson has been a member of several important organizations relevant to her field. Most notably, she was a past member of the San Diego Dietetic Association. Through that organization, Ms. Nelson was able to network and find more opportunities within the dietetics and nutrition industry, as well as support others entering that industry.
Among her career accomplishments, Ms. Nelson is especially proud of her ability to center patients and prioritize their needs. She believes her persistence and determination set her apart from other dietitians. Ms. Nelson showcases a deep commitment to the well-being of all of the patients she works with. She emphasizes the need for patients to have a steady, dedicated partner in their health choices rather than someone who is focused on perfection. When considering the roots of her success, Ms. Nelson points to her upbringing, where she was instilled with the belief that every person should be treated with dignity. She also expresses thanks for the mentors who have helped her throughout her journey.
Beyond her professional life, Ms. Nelson is a devoted wife and a loving mother to one son. When she’s not working, she relaxes by swimming, dancing, hiking and traveling to new places. Although Ms. Nelson is looking toward retirement in the near future, she also hopes to maintain a part-time job. While she’s eager to embrace a less demanding schedule that gives her more time to travel, she also aims to stay engaged in helping others, as that remains one of the most important things in her life.
