Andrew Akhaphong, RD, Registered Dietitian Manager at Mackenthun’s, has been recognized by Marquis Who’s Who Top Health Care Professionals for dedication, achievements, and leadership in nutrition.
Since 2019, Mr. Akhaphong has found success as a registered dietitian manager with Mackenthun’s in Waconia, Minnesota. Alongside this position, he has been a consulting registered dietitian and owner of Kin-Di Nutrition since 2018. Prior to his current positions, he was a clinical nutrition manager with Volunteers of America, a lead clinical dietitian with Walker Methodist, and a clinical dietitian with both A’viands LLC and the St. Gertrude’s Health and Rehabilitation Center. Mr. Akhaphong began his career as a lead clinical dietitian with Golden Living from 2014 to 2016 and a registered dietitian with Hy-Vee Inc. from 2016 to 2018. In 2021, he completed an internship with My Sports Dietitian.
To prepare for his professional career, Mr. Akhaphong attended Minnesota State University, Mankato, graduating with a Bachelor of Science in family consumer science with a concentration in dietetics in 2013. In 2021, he earned a Master of Science in health promotion from the University of Central Arkansas. Currently, he is pursuing a doctorate in clinical nutrition at the University of Kansas Medical Center. Mr. Akhaphong holds myriad professional certifications, including a Certificate of Completion in the Low FODMAP Diet for IBS from Monash University, which he received in 2020. Also in 2020, he earned a Weight Management Specialist Certificate from the American Council on Exercise, and in 2019 he earned an ACTION Certification in Group Exercise.
For his career accomplishments, Mr. Akhaphong was a nominee and finalist for Retail Dietitian of the Year in 2021 from the Retail Dietitians Business Alliance LLC, a distinction he considers the highlight of his career. To keep abreast of changes in his field, he was the education co-chair of the Minnesota Consultant Dietitians from 2019 to 2021. He has also maintained affiliation with the Minnesota Academy of Nutrition & Dietetics, the Academy of Nutrition and Dietetics, Phi Theta Kappa, and Phi Upsilon Omicron. In the coming years, Mr. Akhaphong plans to complete his doctorate and work to transform the perception of grocery stores into “non-traditional outpatient settings,” where customers can find products to support their health and well-being.
