Amber L. Pankonin, instructor at the Great Plains Culinary Institute of Southeast Community College, has been recognized by Marquis Who’s Who Top Health Care Professionals for dedication, achievements, and leadership in the field of nutrition.
With nearly two decades of experience to her credit, Ms. Pankonin has excelled as an instructor at the Great Plains Culinary Institute of Southeast Community College, her alma mater, since 2021. Specializing in nutrition education, she has also acted as a host for the Health Under Pressure Podcast since 2017 and as a registered dietitian, food stylist, and recipe developer for Stirlist since 2013. In her other teaching endeavors, Ms. Pankonin previously served as an adjunct professor at the University of Nebraska-Lincoln from 2014 to 2020 and at Southeast Community College from 2010 to 2013. She began her career in 2005, operating as a corporate cook in hospitality for Talent Plus until 2006. As part of her dedication to her profession, Ms. Pankonin also remains affiliated with several industry-related organizations, including the American Culinary Federation, the Academy of Nutrition and Dietetics, and the American Society for Nutrition.
Before embarking on her vocational journey, Ms. Pankonin pursued a formal education. After earning an Associate of Applied Science in hospitality and dietetic technology at Southeast Community College in 2002, she subsequently received a Bachelor of Science in nutrition science and a Master of Science in nutrition from the University of Nebraska-Lincoln in 2004 and 2009, respectively. Additionally, Ms. Pankonin is a certified executive chef and a registered dietician. Well regarded for her accomplishments in the field, she was recognized as the Outstanding Dietician of the Year by the Nebraska Academy of Nutrition and Dietetics in 2021. In the coming years, Ms. Pankonin hopes to write a recipe book that will teach individuals, especially working professionals, how to easily prepare meals.
