Elizabeth Ann Larson, RD, LD, Retired Clinical Dietician, has been recognized by Marquis Who’s Who Top Health Care Professionals for dedication, achievements, and leadership in nutrition and dietetics.

Throughout her upbringing, Ms. Larson recalls practicing good health and nutrition was stressed in her household. Having been overweight at one point in her life, she felt inspired to pursue a career where she could help others lead a healthier lifestyle. Notably, she earned a Bachelor of Science in dietetics and community nutrition from the University of Minnesota in 1976 and became a registered dietitian in Minnesota. Ms. Larson commenced her career as a food service worker at Rochester State Hospital from 1975 to 1977, going on to work at Pine Haven Nursing Home and Lake City Nursing Home as a consulting dietician between 1978 and 1980. From 1980 until her retirement in 2019, she excelled as a clinical dietician for Essentia Health Duluth, formerly known as Miller Dwan Medical Center.

An expert in physical medicine and rehabilitation, Ms. Larson was the recipient of the Minnesota Dietetic Association’s Award of Valor in 2010. In addition, she was granted the Head of the Lakes District Dietetics Association Most Valuable Player Award in 2010 and 2000, as well as the Outstanding and Distinguished Member Award of the Dietitians in Physical Medicine and Rehabilitation Practice Group. To remain abreast of her industry, Ms. Larson maintains affiliation with the Academy of Nutrition and Dietetics, Minnesota Academy of Nutrition and Dietetics and Medical Nutrition Practice Group of the Academy of Nutrition and Dietetics. Outside of her professional work, she has been actively involved with the Lester Park United Methodist Church as the church mission chairperson between 1997 and 2007, council secretary from 2008 to 2018 and staff parish council chairperson from 2016 until 2018. To attest to her legacy, Ms. Larson can also be found in the 18th edition of Who’s Who of American Women. In her spare time, she enjoys baking, traveling and volunteering.
