With more than 65 years of professional experience, Ms. Moon has been a continuing education instructor with Pennsylvania State University since 1997, having held the same position with the school from 1984 to 1986. Prior to obtaining her current role, she was a counselor with Bi-County Women Infants and Children Services from 1988 to 1990, and an associate professor of foods and dietetics for the Williamsport Chamber of Commerce from 1970 to 1988. Earlier in her career, she was a home economics teacher with Commodore Perry High School from 1967 to 1968 and an extension home economist for Pennsylvania State University from 1953 to 1962.

Ms. Moon first pursued an education with Pennsylvania State University, where she obtained a Bachelor of Science in home economics in 1953. She later continued her studies with the school, earning a Master of Education in nutrition in 1975. A registered dietician, she has been certified by the Culinary Institute of America and Cornell University. She is a member of the National Dietetic Association, and a former member of the American School Food Service Association, the American Restaurant Association, the American Public Health Association, the Pennsylvania Dietic Association, and the Mercer Republican Women.
